2 Ingredient Dinner Kids Can Help Make: Apple Juice Chicken
Kids always love to be little helpers in the kitchen. This delicious two-ingredient recipe can teach them that it’s easy to make a simple meal with some of their favorite things. Always be sure to closely supervise kids when cooking around the stove.
Ingredients
- 1 3/4 cups of 100% unfilteredapple juice
- 1 pounds skinless, boneless chicken thighs
- Salt and pepper to taste
Preparation
On the stovetop, heat a deep pan on medium heat (do not use a non-stick pan). Add all of the apple juice and bring to a low boil. While the apple juice is heating, season both sides of the chicken thighs with salt and pepper. Once the apple juice begins to boil, add in the chicken. Reduce the heat to low, cover the pan and let simmer for 15 minutes. After 15 minutes flip the chicken and let cook for another 15 minutes with then pan only partially covering the pot this time. Remove the lid completely and let cook for another 10-20 minutes, turning the chicken every few minutes, until the juice is thick like honey. Be sure to watch the chicken closely for the last few minutes. If left unattended, the syrup can burn quickly.
Serve
You can serve this dish over a grain like rice or quinoa, over mashed potatoes, or by itself with some grilled vegetables or a salad on the side.
